I remember a different video where someone did a lobster in jerk sauce. Split the whole fresh thing in half and put it over wood with the spices. Came out with some of the jerk char but with the rest of the meat still sweet.

Some jerk prawns and coconut rice & beans... nice meal. Wash it down with some fresh ice cold lemonade (maybe spiked with Jamaican rum 
).
