MountainWitch ⛤:flag_bisexual:<p>In light of the recent developments, I wanted to do a little write up on Canadian based companies with lists to shop from. After looking at the 5th list I found and being disgusted because all the top ones are fossil fuel companies, a bank, or other humongous corporations that I don’t even recognize with a couple like London Drugs sprinkled in. Many people are, rightfully so, suggesting that people buy local from small stores, farms and makers. </p><p>The biggest problem here is that, as a maker/artist myself, I can’t get ANYTHING that I use for my shop that is made strictly in Canada. Paints, clay, varnishes, tools, jewellery findings, fabrics, bottles, jars... almost everything takes a roundabout trip from China and sometimes from the US. Years ago when I was a seamstress I use to cross border shop for fabric since I live very close to the border. I learned that our “free trade deal” only meant verifiable products manufactured in the USA, nothing that took a route through the US from other countries. So, in carefully keeping my receipts and declaring everything to pay as little duty as possible, I found out what was actually manufactured in the States. </p><p>The materials to make things bought from Canadian companies are usually sourced outside our borders. It’s frustrating but that is the way of this capitalist world we live in. I do recycle and reuse a lot of stuff, I find wooden boxes and other items to refinish and resell. I use little to no outer packaging if I can help it. Most ingredients in my incense and inks are right from the land I live on. But this is a drop in the bucket of what I need to keep doing my shop. </p><p>I have started buying almost all new lumber that I use for household projects mainly, for a small mill a few km away that comes right off a mountain I can see and is not kiln dried. Lumber used to be first shipped off-shore as raw logs then returned milled. It’s much more complicated now and I don’t know all the details without doing a ton of research. But, it is easier and better for my local community for me to buy right off the mountains that I live in. I buy wheat and other grains from local farms, and grow what I can, buy locally what I can’t. </p><p>But for much of the stuff I use in my business, it comes from elsewhere first. I can make sure to buy from local retailers to spread that dollar around in the community, not just while the strikes are on, but as much as possible. Like it or not, we live in a Global community for the time being and we need to get on with life as we can. So yes, I will buy from the shops lining my little hometown streets. MountainWitch ⛤:flag_bisexual:<p>Nigella Lawson&#39;s Italian Pudding Cake is the most sublime thing for Yule dinner dessert. I made a gluten free version for my daughter with trepidation, not knowing if it would even be good. According to her (and she&#39;s tried EVERYTHING) it turned out perfect. So below is the original recipe from Nigella&#39;s site. The filling is always more than enough so I had plenty for a gluten free version. I made a President&#39;s Choice (from real canadian wholesale) yellow gluten free cake mix using sunflower oil instead of butter (because it was handy) I chopped up about 1/2 a cup of red glace cherries and added to the dry mix before mixing it up with the oil, eggs and water. I used a cake pan sized cast iron skillet oiled and with a bit of baking paper on the bottom. Bake for 40 min. at 325. I cut it horizontally in half to make 2 layers when it was cool. Instead of using a spring form pan for this one, I just assembled it on a plate with 2 layers with filling and pom seeds on both layers.</p><p>For the reg. cake I followed the instructions except I did not have pistachios so left them out. I used organic cane sugar instead of castor sugar, Port instead of the Tuaca and Marsala, and this year left out the chocolate chips because I think they are too crunchy. The pomegranate seeds are so perfect with this. All other ingredients and amounts are the same. It truly is worth trying if you want an easy splurge as this is even better made the day before and left in the fridge or in my case on the veranda in the cold. MountainWitch ⛤:flag_bisexual:<p>We&#39;ve had a cloud inversion here in my valley. It is so dark and damp, not cold but not cozy. Just awful. The kind of weather that is more depressing than an Irish whisky hang over. So, I decided to pull out some Yule food, like cheese, deli meat and pickles to perk us up. <br />I absolutely hate the commercialism of food and the ridiculous prices that some food costs based on trends or other unnecessary things. For instance, crackers. The price of crackers, especially what is deemed as gourmet and natural or not loaded with preservatives and crap. So, while it does take a bit of time, making crackers is very worthwhile. I made one batch with 4 kinds of toppings here, sesame seed, salt and pepper, just salt and hemp seeds. The only tricky part is baking them for exactly the right amount of time.. too little and they aren&#39;t crisp enough to scoop anything, too long and they get too dark. When they are in the oven, don&#39;t wander off to do something. Watch them like a hawk. </p><p>3 cups of flour- plus a tiny bit for rolling<br />1 or 2 tsp of sugar<br />2 tsp salt<br />1/4 oil (I used olive)<br />1 cup of water. </p><p>Mix the dough and briefly knead just to bring it into a homogeneous ball. Cut ball into 4 equal pieces. Each piece rolls out perfectly on a jelly roll pan. I flipped the pan upside down so the edges aren&#39;t in the way. I also used a silicone mat instead of grease or baking paper but paper would work well too. </p><p>After rolling out the dough to the dimension of the pan, I cut into cracker sized squares. I quickly ran my hand into the water tap, then patted the water onto the top of the cut dough. This helps the toppings stick. Sprinkle what you want on the top or leave plain. Bake from 10 to 15 min. at 450 F. My oven is a little weird and the first ones took like 15 min. but the last batch took 11 min. They get even crispier as they cool. Keep them airtight. MountainWitch ⛤:flag_bisexual:<p>Since extended family have come to live with me, I have learned how to cook everything twice.. as in one pot of regular whatever and one pot of the same but in a gluten free version for my daughter. (she was on life saving anti-biotics in high school for a couple of weeks and ended up with a messed up gut after college) She is very kind and not demanding whatsoever, she always tells me to just cook and bake what ever we need to. We also share cooking duties kind of alternating dinners for everyone. But I have been getting pretty good at finding recipes so that she can enjoy the same as the rest of us at every meal that we share. Two days ago I made traditional fruit cake for Yule. She looked longingly at the loaves. 🥺 <br />Today I made one just for her. I really hope it turns out. I&#39;ll share the recipe if it does. MountainWitch ⛤:flag_bisexual:<p>I have a book shelf full of old recipe books, some left to me by my mom, that over the years I have slowly disregarded. The reason is that they are from the era when so much packaged food was used. Canned soups, cake mixes, packaged seasonings, corn syrup- a lot of junk I haven&#39;t used for years. I have often gone back to them in a wave of holiday nostalgia. I realized that I can re-write most of them to include ingredients I make from scratch, organic foods, etc. In doing so, I also realized that my re-working of the recipes is probably just reverting back to the ORIGINAL recipes that were re-worked by “modern” post-war publishers that thought they were doing a great thing by making all the “convenient” food available and pushing the corporate machine with their advertising and so on. Look up the Kraft food commercials of the 70s. So gross. Nic<p>I started my tradition of making lemon marmalade on the <a href="https://kolektiva.social/tags/WinterSolstice" class="mention hashtag" rel="tag">#<span>WinterSolstice</span></a> years ago and it&#39;s become one of my favorites. It started by accident when I wanted to make a kind of <a href="https://kolektiva.social/tags/fruitcake" class="mention hashtag" rel="tag">#<span>fruitcake</span></a> that called for 1/4 cup marmalade. Since I didn&#39;t have any I decided to make some, but I didn&#39;t pay attention to the yield at all. After simmering lemons all day I needed to make a trip to the store to get the five pounds of sugar the recipe called for, and ended up with four quarts of marmalade. 😆 Luckily, friends were happy to share. </p><p>The tradition has become so meaningful for me during <a href="https://kolektiva.social/tags/yule" class="mention hashtag" rel="tag">#<span>yule</span></a>. It&#39;s a process of simmering brightness and light right into the air, all day long. The final product is a little bit bitter, a little bit sweet, a golden preservation of light. It goes perfectly on so many holiday sweets (like the <a href="https://kolektiva.social/tags/stolen" class="mention hashtag" rel="tag">#<span>stolen</span></a> in this picture) and is lovely to share with friends.</p><p>And I still make the fruitcake as part of my tradition, too, but that will need to be it&#39;s own toot. 😊</p>
